Thanksgiving Recipes:

     Leftover Pot Pie

     Ingredients:

          Whatever you have leftover from Thanksgiving dinner -- turkey, stuffing, potatoes, vegetables, etc. Be sure to only use things that everyone in the family will eat. We usually make two pies because my husband likes thing like creamed onions and sweet potatoes and I don't, so the two pie thing gives us the opportunity to customize our pies.
          8 to 16 ounces of gravy (use jarred if you don't have enough leftover)
          1 or 2 pie crusts

     Directions:
  1. Preheat the oven to 375 degrees.
  2. Cut the turkey and other leftovers into bite-size pieces.
  3. Lightly mix all the leftovers together in a large bowl.
  4. Pour the mixture into a 9-inch pie dish or a 13x9x2" pan.
  5. Cover the mixture with the gravy.
  6. Roll out your pie crust (one for the smaller pie dish, two for the larger pan) then lay it across your pie. Crimp the edges, and cut holes for the steam to escape.
  7. Cover the edges with aluminum foil.
  8. Put the pie in the oven for 25 minutes then remove the aluminum foil. Bake for another 20 minutes or until the crust is a golden brown.
  9. Allow the pie to cool some, serve warm. Serve the pie as you would a casserole.
