     Ingredients:

3-pounds cooking apples - I prefer Cortland apples
          1 cup of water
2/3 cup brown sugar (usually recipes call for regular sugar but the brown sugar is what gives this recipe the apple pie flavor)
          1/4 teas. of ground cinnamon

     Directions:
  1. Peel, core and quarter the apples.
  2. Combine all the ingredients into a large pot or dutch oven.
  3. Bring to boiling and reduce the heat.
  4. Cover and simmer for 8 to 10 minutes or until tender, adding more water as necessary. You can mash the mixture with a potato masher or put through a food processor to make smooth, we prefer the apple chunks.
  5. Serve warm or chilled.
